Steak, steak

The theme of these posts seem to revolve around food.  My cravings are intensifying. 

Day two is upon us and the shock has worn off...a little bit.  This morning I spent an inordinate amount of time researching pregnancy stuff, online.  I discovered that pregnant ladies can, in fact, eat fish.  Several different types of fish, to include salmon and catfish.  I'm from the south, where catfish is the state animal of Arkansas, Texas, and Louisiana.  In all honesty it is not the sate animal of these states, but I love it, and was very happy to realize we could continue eat it.  We make a salmon and dill flat bread which my wife really likes(recipe to follow). I emailed her immediately and let her know of the discovery.  I was like the hurricane kid of website referrals.  During my frenzy, I found a mommy boot camp website.  It looked awesome, and a kind of workout that Gina would love.  She did a boot camp type workout series a couple of years ago and found it to be fun.  I almost signed her up but realized that the boot camp was in Virginia.  I need to pay more attention to the websites. 

Even though we've only known about the peanut for two days we both have been experiencing a lot of emotions.  I am excited about all of this, but a little bit nervous, in a good way.  I just want everything to work out. I will also never know what it is like to have a little one growing inside, but through her I can be a part of it.

During my preparation for dinner I felt it necessary to tell Gina, "Babe, I will do everything I can to make you happy and comfortable during your pregnancy".
She smiled and responded with, "Steak".
I thought she responded with, "Danke", and I laughed.
She, then, said (with assertion), "Steak, steak."
Oh, I realized, "Steak...you got it".

Feel free to play with the following recipe.  I researched cheese's relationship to pregnancy and discovered goat cheese can be safely consumed, IF the cheese is pasteurized.  Different experts have opposing views on this one.  You can, also, make it more acceptable by cooking the cheese until its bubbly, in effect, neutralizing anything harmful.  

Salmon and dill flat bread sandwich goodness:
1. 1 piece of whole grain flat bread
2. 2 oz cooked salmon
3. 1 tbsp goat cheese
4. 1/2 tsp fresh dill
5. 1/2 tsp capers
6. Olive oil
7. Freshly cracked black pepper

Brush olive oil on to the flat bread and toast it in a preheated 350 degree oven for 3-5 minutes, or until golden brown and delicious.
First, lay down the salmon, evenly, across the flat bread.  Then, place the goat cheese over the salmon.
Place the salmon and cheese topped flat bread in to the oven and toast for 5 more minutes.
After taking if from the oven, add the dill and capers.  Season with black pepper.  I avoid salt due to the briny nature of the capers.
